Para conocer la historia de la Fábrica de Licores del Tolima se hace necesario conocer la historia de algunos hechos muy significativos ocurridos en nuestra patria.En Colombia, como en casi todos los países del mundo, existe un licor el cual enmarca su más profunda esencia. Sin embargo, en nuestro país, debido a la mezcla de dos culturas son dos las bebidas tradicionales: la chicha, herencia pura de lo indígena y el aguardiente hijo de la España imperial.
La historia del aguardiente en el mundo es muy antigua. En el sentido estricto, el aguardiente es la primera etapa en la destilación de cualquier alcohol. Su preparación se basa en el antiguo principio de que el alcohol es mas volátil que el agua, lo que equivale a decir que hierve a una temperatura más baja. Por lo tanto, si se recoge y condensa el vapor, se tendrá alcohol con muy poco agua y con esto se habrá obtenido aguardiente.
Este proceso era ya conocido en Oriente hace muchos años. Existe evidencias de destilación en Mesopotamia 4.000 años antes de Cristo. Pero fueron los árabes quienes lo introdujeron en el siglo XVI al mundo Occidental. Del Arabe provienen palabras como alambique y alcohol, parte del lenguaje usado en la destilación del licor.
